Spicy Peanut Tofu

Crispy, sweet, salty, an all-around perfect addition to your Asian style meal. I have added it to fried rice and veggie stir fry topped with cilantro soo tasty, you'll see the pics!

For the best tofu you'll want to buy the exact one I mention (Publix, Whole Foods. Trader Joes all carry it), if not I recommend buying the firmest one your store carries and pressing out the liquid. Also I use an air fryer which helps the crunchiness, but the oven can work too!

Serves 4-6

Total Time: 25 mins

Ingredients:

  • 1/4 cup Creamy Peanut Butter

  • 2 tbsp Chili Garlic Sauce (Brand I use is Huy Fong Foods INC.)

  • 2 tbsp Maple Syrup

  • 1 tbsp Soy Sauce

  • 1/2 tsp Ground Ginger

  • 1/4 cup of Veggie Broth

  • 16oz Tofu (Use a brand that says High Protein Super Firm)

Directions:

  1. First cut open the tofu package and drain out the water. You can give the block a squeeze too!

  2. Place the block on a cutting board. Using a dry washcloth press the tofu so excess water comes out. Slice it horizontally in half so it makes two thinner blocks. Cut six strips on each block, then six the other way making little cubes. Some pieces will end up bigger than others so just cut those in half again!

  3. Prep the sauce. In a flat mixing bowl whisk together all the sauce ingredients. Taste and adjust the spicy to sweet ratio.

    Toss half the cubes of tofu in and mix around.

  4. Using a fork (so the sauce drips off) take out the cubes of tofu and place them either in the air fryer or baking sheet. Toss the other half of tofu in the sauce an mix throughly. Remove with a fork.

    *There should be some sauce leftover, you will use it at the end!

    **Not all of mine fit in the air fryer together so I made it in two batches.

  5. Air Fryer: Cook on high heat for ~12 minutes. Halfway through take it out and shake it up.

    Oven: I have not tried, but I would suggest 350 F for 15 minutes, flip/shake halfway through.

  6. Be the judge of your tofu cooking time and how crunchy you like it!

    Once it's done you can toss the tofu back in the sauce and serve it with some veggie rice! Take pics and let me know how it turns out :)
